More Peanut Butter! Peanut Butter Cookies

If you've been reading for a while then you have surely seen the original recipe for low carb peanut butter cookies.  These cookies are one of my favorite desserts, for many reasons.  I always have the ingredients on hand, so there's no extra trip to the grocery store.  They're super easy to make- the whole process only takes a few minutes.  Plus, they're easy to pick up and eat, unlike butter pecan creme brulee (another of my favorites).  The only drawback is that the Splenda leaves something of an aftertaste.  It's not hugely noticeable and definitely not enough to detract from the overall goodness of the cookie, but it is something I've been trying to remedy.  This additional recipe for low carb peanut butter cookies packs a wallop of peanut butter flavor.  Adding flax seeds adds for a different and interesting texture.  I've called it a success.

Ingredients
1 C peanut butter
1 egg
1 C Splenda
1/2 C ground flax seeds
1 Tbsp vanilla extract

Directions

  1. Add all ingredients to a large bowl.
  2. Mix with a wooden spoon until all ingredients are incorporated.
  3. Roll dough into golf ball sized balls.
  4. Place dough balls onto a greased cookie sheet.
  5. Using a fork dipped in Splenda, flatten each cookie by making a plus shape.
  6. Bake for 10-15 minutes.  Enjoy!
These cookies are a little bit more crumbly than the original recipe, so I would recommend them for eating at home.  I tried to take one to work and I ended up eating peanut butter crumbs.  The peanut butter flavor is amazing though, and worth it.

Once your cookie batter looks like this it's ready to be formed into balls.
If it's too thick, add a little water or coconut oil.  If it's too runny, add
more flax.

Beef Curry from Simmer Sauce

Normally I don't make curries because they are just too much trouble.  Too many spices to mix, they don't taste good if you don't get the proportions just right, and we don't eat rice so what's the point?  I feel like my life was changed last week when I tried Classic Curry Simmer Sauce by Spicy Nothings.  I have read about simmer sauces before but have never actually used one for cooking.

I was running to the post office for work and I stopped by Glut Food Co-op in Mt. Ranier to pick up some coconut oil.  Glut is a nonprofit, worker managed cooperative.  You can read more about their mission and values online.  Anyway, I was reaching for the coconut oil when jars of curry caught my eye.  Awesome boyfriend and I love curry, especially a really spicy one.  I picked one up and low and behold- 12 carbs in the entire jar, which makes enough curry to serve 3 or 4 people.

Awesome boyfriend and I decided to call this recipe a smashing success, after we reconciled following an argument over who got to take the leftovers for lunch the next day.  I believe that you could substitute meat or vegetables of your choosing in this recipe.  I also think that there are other simmer sauces that you could try if you can't get your hands on this one, just make sure to check the carb count.

Ingredients
1 jar Spicy Nothings Classic Curry Simmer Sauce
1 pound beef (flank steak, skirt steak, or sirloin)
1 broccoli crown
1/2 of 1 yellow onion
2 C green beans
3 Tbsp coconut oil

Directions

  1. Add oil to a large pot and heat over medium high.
  2. While oil is heating chop broccoli and green beans into bite size pieces.
  3. Add broccoli and green beans to pot.
  4. Chop onion into inch long, thin slices and add to pot.
  5. While veggies are cooking, cut meat into thin strips.
  6. Add meat to pot and stir ingredients together with a wooden spoon.
  7. Continue to cook ingredients, stirring occasionally, until meat is cooked through and veggies are tender.
  8. Add entire contents of Simmer Sauce jar to pot and stir with a wooden spoon.
  9. Bring ingredients to a boil, then reduce heat to simmer.
  10. Cover and cook for 20 minutes.
  11. To serve, use a slotted spoon to remove meat and veggies from sauce.  Spoon into a bowl.  Serve with additional hot sauce if desired.

My old friend, we meet again.

Cutting meat into bite sized pieces.  You don't want meat pieces to be so
big that you have to cut them to eat.

Veggies and steak cooking in coconut oil.  Once the steak is almost done,
add the simmer sauce.

I just added the simmer sauce and covered the pot.  If you don't have a pot
with a lid you can cover with foil.  I love this pot.  I highly recommend
investing in a good nonstick soup pot if you don't already own one.

Groceries Thursday, June 7

  • large container of heavy whipping cream: this is an important ingredient to keep on hand because it goes in so many recipes.  Also I use it for my coffee every morning.
  • small container of heavy whipping cream: this one goes to work.  I use it there for coffee, and when I make Chai in the afternoons.
  • 2 pounds flank steak: for use in Beef Curry from simmer sauce recipe
  • large yellow onion: for use in Beef Curry recipe
  • broccoli crowns: for use in Beef Curry recipe
  • green beans: for use in Beef Curry recipe
  • 1 block of muenster cheese: cheese is a great low carb snack.  It has a lot of calories, so don't go crazy, but several ounces is fine in the afternoon.
  • 1 block of Colby Jack cheese: normally I never buy reduced fat cheeses, but that was all they had.
  • Classic Curry Simmer Sauce: for use in Beef Curry recipe
  • coconut oil: so many uses I wrote a whole page about them.
  • Stinton cheese with cranberries: this one does have a few carbs because of the berries so make sure you measure how much you are eating.  It's delicious and good for sweet cravings.
