Have A Good Morning Hot Flax Cereal

This hot cereal is similar to oatmeal in flavor but a little bit thicker.  I love it because it's something a little sweet in the morning, and it keeps me full all the way until lunch.  Plus, flax is a power food (more about that later).  It's high in fiber and protein and a great addition to a low carb diet.



Ingredients
1/4 C milled flax seeds
1/4 C heavy whipping cream
1/4 C water
1 Tbsp butter
2 packets Splenda
1/2 tsp cinnamon

Directions

  1. Add all ingredients to a microwave safe container and stir.  
  2. Microwave for one minute.
  3. Stir again.  Cereal should be hot enough, but if you would like it hotter you can nuke it for another 30 seconds.  
  4. Enjoy!
Easy, right?  Once again, if your mornings are anything like mine you are running out the door with your jacket half way on.  You can prep this ahead of time and store it in the refrigerator overnight.  Heat it up in the morning or take it to work with you and heat it up there.

  1. Hmm... mine came out with a weird rubbery/raw dough texture :( I really wanted this to be good, I miss oatmeal!

    1. The texture is somewhat different than oatmeal, but I wouldn't describe it as rubbery. I do find a difference in texture when I make my flax the night before and when I make it in the morning. Try mixing the flax, cream, and water and letting it sit overnight before you heat it the next morning. Also, maybe use a little bit more butter. It seems to help with the texture. If you really miss your oatmeal you can always use half flax and half oats, just make sure that you buy plain oats and not the stuff from the packet.

    2. Thanks, Kelly! I will try that and let you know how it goes! If that doesn't suffice, I will try halving it with oats and then doing a gradual weaning from the oats and see if I can become accustomed to the texture.
