Tomato, Onion, and Gorgonzola Salad

This salad was extremely easy and goes really well with a savory meat dish.  I chilled it in the fridge for an hour or so before serving and it was a nice, cool compliment to the hot steak that I served it with.  Another plus is that these ingredients are inexpensive.

I actually made that bowl when I was taking ceramics in college.  Pretty cool, huh?
Ingredients
2 pints grape tomatoes
1/3 of 1 red onion
4 ounces Gorgonzola cheese
2 Tbsp olive oil
1 Tbsp apple cider vinegar
1 tsp salt
1 tsp black pepper

Directions
  1. Half tomatoes lengthwise and add to a large bowl.  
  2. Dice onion and add to tomatoes.  
  3. Add cheese, olive oil, vinegar, salt, and pepper.  
  4. Toss with hands or a wooden spoon until all ingredients are evenly incorporated.  
  5. Chill for 20 minutes before serving.
